ROASTED FRESH NJ BELL PEPPERS

Ingredients 

  • 12 jerzey fresh red bell peppers

  • 6 cloves of garlic, minced

  • 1/4 cup extra virgin olive oil

  • Course Sea Salt or Kosher Salt

  • Black pepper butcher cut ( larger cut)

  • Juice of 1 large lemon

  • Optional basil for garnish

How To Cook

  • At Zinna’s we roast in our convection oven at 550 usually 20 min at home you can blacken on a BBQ grill or on a burner on the stove

  • Once cooking is complete put in a paper bag and then place the paper bag into a plastic bag ( this will steam the skin and make it easier to remove )

  • Peel the skin off the peppers and remove steam

  • Slice peppers long way 1/4 wide

  • Add all ingredients mix and let sit for about 2 hours, this will allow all the flavors to come together

  • Will last in the fridge for 7 to 10 days

  • When serving top with squeeze of lemon juice

  • Optional garnish with basil

  • Finish with a good extra virgin olive oil
