ROASTED FRESH NJ BELL PEPPERS

Ingredients

12 jerzey fresh red bell peppers

6 cloves of garlic, minced

1/4 cup extra virgin olive oil

Course Sea Salt or Kosher Salt

Black pepper butcher cut ( larger cut)

Juice of 1 large lemon

Optional basil for garnish
How To Cook

At Zinna’s we roast in our convection oven at 550 usually 20 min at home you can blacken on a BBQ grill or on a burner on the stove

Once cooking is complete put in a paper bag and then place the paper bag into a plastic bag ( this will steam the skin and make it easier to remove )

Peel the skin off the peppers and remove steam
-
Slice peppers long way 1/4 wide

Add all ingredients mix and let sit for about 2 hours, this will allow all the flavors to come together

Will last in the fridge for 7 to 10 days

When serving top with squeeze of lemon juice

Optional garnish with basil

Finish with a good extra virgin olive oil
